Monarch on a Mission

Hello Burlington September 29, 2021 Forced to shut its doors once the pandemic hit, Monarch and the Milkweed - chef Andrew LeStourgeon's beloved Burlington "fine diner" - has returned with a revamped menu and mission. Just don't expect his famous chicken and waffles, or the grilled cheese and tomato soup fans of the restaurant came to adore. "It didn't make sense for us to pursue the restaurant as it was the day before we closed March 17th of 2020," he explains, citing a variety of industry factors that make the restaurant's former incarnation less tenable. Service industry gets creative despite challenging factors

NBC5 September 1, 2021 The hospitality industry is seeing staggeringly low staffing, increased food costs, and fluctuating capacity limits. He said less space allows the café to operate with less staff. “I can run that with a limited menu and three people instead of seven," he said. Dickie Austin, Co-Operator of Bearded Frog, Park Squeeze, and Black Sheep...

However, fans of Monarch's epic grilled cheese sandwich and tomato soup, chicken and waffles, maple-brûléed pancakes or Parisian pâtisserie-level pastries will be disappointed. The food menu will now consist of pizzas and the signature salad from next-door neighbor American Flatbread Burlington Hearth.  Offerings will include a new "Monarch" pizza topped with...
